Vegetable Bacon Strata

stratas are like quiche without the crust!  you can be very creative with what you put in it.  i make stratas when i have weeks end vegetables in the refrigerator to use up.   you can easily make this without bacon if you perfer a vegetarian strata.
5 eggs
1-1 1/2 cups milk
4 strips bacon
2 potatoes sliced
1 small head of broccoli chopped
1/2 of a red pepper diced
fresh herbs or seasoning of your choice.  i used an italian seasoning of oregano, thyme, marjoram, basil, garlic & lemon.
julia child’s all-purpose custard works great (for strata or quiche) no matter what filling you use:
crack 1 large egg in a measuring cup and add milk to reach the 1/2 c mark, multiply as needed to fill your casserole dish.  for example, i cracked 5 eggs into 4c measuring cup and stirred in enough milk to reach the 2 1/2 c mark.
measure the milk to egg combination and blend with a hand held blender or whisk well, set aside.
vegetable & bacon filling:
fry 4 strips of bacon and remove from pan
add potatoes, 1/2 tsp. italian seasoning or fresh herbs and salt/pepper to taste, saute until browned and tender
add broccoli, saute until tender
add red pepper for just a few minutes
place vegetable saute in a lightly oiled 1.5 L casserole dish, pour the all-purpose custard over the filling and top with crumbled bacon. 
preheat oven to 375, place strata on the middle rack and bake for 20-35 minutes or until lightly puffed and nicely browned.
