Sun Ball Sweeties

A delicious and healthy snack!

1/2 cup sunflower seeds, ground
2 tbsp sunflower seeds, toasted
1/2 cup shredded, unsweetened coconut
1/4 cup almond butter
1 tbsp maple syrup
1 tsp almond extract
1/2 tsp coriander
1/4 tsp cinnamon
1/4 tsp nutmeg

Grind 1/2 c sunflower seeds in a spice or coffee grinder to a course meal. Toast 2 tbsp sunflower seeds in a dry pan on medium heat, stirring as to not burn, until toasted (they will turn toasty brown:).  Mix all dry ingredients together in a mixing bowl, mix well.  Then add remaining ingredients, mix well and press into 1 inch balls.  If the mixture gets too dry to press into balls add a few tablespoons of coconut oil.

If you’d like the Sun Balls to be less sweet and packed with more energy, add 2 tbsp chia seeds.


Makes 15. I always make a double batch as I eat them so quick!
