Spiced French Toast with Cardamom Pears + Pecans

the french toast

2 eggs
2 tbsp milk (i used almond)
1/2 tsp cinnamon, ground
1/2 tsp cardamon, ground
1/4 tsp ginger, ground
1/8 tsp clove, ground
1 tbsp butter/ghee
4 slices bread (i use uddi’s gluten free)
Heat the butter in a large skillet on medium.  In a large bowl whisk the first 6 ingredients together, soak each piece of bread in the mixture for 30 seconds, covering each side thoroughly.    Place bread into the warm skillet, cooking each side for about 2 minutes or until golden brown.
the pears

2 firm, yet ripe pears
1 tbsp butter/ghee
1/4 c maple syrup
1/2 tsp cardamom, ground
1/2 tsp cinnamon, ground
1/2 c pecans, chopped

Cut and core the pears, slicing thinly.  Melt the butter in a saute pan over medium heat.  Add cinnamon, cardamom, and syrup, mixing well.  Add the sliced pears sauteing for 3-5 minutes, until tender and warm. Stir in pecans. Serve over spiced french toast with maple syrup.
