Pumpkin Lover’s Oatmeal

2 cups water
1/2 cups steel cuts oats (well rinsed)
1/3 of a chopped apple
a few shakes of ‘sweet churna’

bring the above to a boil, then turn down to low for 20-30 minutes.  when the oatmeal is soft and the water has been absorbed add:

1/4-1/2 cup canned pumpkin
a handful crushed walnuts
maple syrup to taste

serves 1

sweet churna is a blend of organic cinnamon, cardamon, fennel, ginger and nutmeg.  i make my own but it can be purchased at puja wellness in madison.
