Grilled Salmon with Kale Pesto & Fennel

2 salmon fillets
1/2 of a fresh lemon divided
1/2 cup sliced fresh fennel bulb
1 cup lacinato kale, chopped
2 cloves garlic, peeled and chopped
2 tablespoons walnuts, lightly crushed
sea salt & pepper
1/4 cup extra virgin olive oil divided
2 tablespoons pecorino-romano cheese (optional)


making kale pesto*

1-add kale, garlic, walnuts and a pinch of salt to the bowl of the food processor. pulse a several times to combine.
2-slowly drizzle in the olive oil through the feed tube of the food processor. depending on the consistency you like, you may not use all of the oil. run the machine continuously for a minute or two to obtain a very smooth consistency. add more oil if the consistency of the mixture isn’t smooth.
3-if desired, add the cheese and pulse to combine.
4-squeeze part of the lemon to taste and add more salt if needed.
5-set aside.
7-in a small saute pan, heat 1 tsp. of olive oil.  saute sliced fennel until tender.
8-then add 2-4 Tbsp. of kale pesto to the fennel to warm.  stirring as not to burn.

grilled salmon 

1-preheat grill for medium heat.
2-sprinkle salmon with salt and pepper, and drizzle with fresh squeezed lemon.
3-lightly oil grill grate. place salmon on the preheated grill. cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork. 

putting it together

place grilled salmon on a plate, top with kale pesto and fennel! 
serves 2 with a little left over pesto.
