Coconut Almond Date Boats

3/4 lbs. medjool dates
3/4 cup almond butter
1/2 cup pitted prunes
3 tbsp coconut butter
3 tbsp shredded unsweetened coconut
1 tbsp coconut oil
1 tbsp flax seed oil
1 tbsp flax seeds
1 tbsp chia seeds
1 tsp cardamom pods
For garnish:
shredded unsweetened coconut
cranberries
1.     In a spice/coffee grinder, grind chia seeds, flax seeds and cardamom pods.
2.     In a food processor, drop the prunes through the feed hole one by one.*
3.     Add remaining ingredients, except for the dates. Run until smooth, scraping the processor bowl with a spatula as needed.
4.     Slice dates on one long side to remove the seed and create a ‘pocket.’
5.     Fill the center/length of each date with the almond coconut mixture.
6.     Garnish each date boat with a dried cranberry and shredded coconut.
*You can also mix by hand.

Makes about 30 date boats.
