Black Eyed Peas + Collard Greens

1 can black eyed peas, well rinsed
1 bunch collard greens, chopped, stems and leaves seperated
1/4 c onions, chopped
1″ piece ginger, minced
1 tbsp olive oil
1 tsp cumin seeds
1tsp turmeric powder
salt + pepper
6 pieces bacon, fried (optional)

Heat olive oil on medium heat, add cumin seeds and let sit in hot oil until aromatic.  Add collard green stems, onions, ginger and turmeric, sautéing until onion becomes slightly soft and translucent.  Stir in collard green leaves, sautéing until tender about 7-10 minutes.  Add salt and pepper to taste.  Add black eyed peas, cook until beans are warm. Top each serving with 2 pieces cooked bacon broken into small pieces. If you have left overs, it’s great for breakfast with a fried egg!
