Everything is best with bacon!

2 c black eyed peas, already cooked or use canned, well rinsed
1 bunch chard, stems + leafs separated, chopped
4 pieces of bacon, cooked
1 inch ginger root, minced
1 tsp cumin seeds
1/2 tsp fresh turmeric, minced
1/2 tsp salt
2 tbsp olive oil

  1. In a mortar and pastel grind the cumin and turmeric.
  2. Heat the olive oil in a large pan, adding the cumin, turmeric, onion, chard stems, ginger and salt.  Sauté until the vegetables are just about tender.  Then add the black eyed peas, sautéing gently to not mush the beans yet to allow them to be coated and heated.
  3. Add the chard leafs, cover and occasionally stir until wilted.
  4. To serve, garnish each serving with two pieces of chopped bacon.
