Baked Apples with Coconut Bliss

this past friday night i went to dave stringer and jaya lakshmi’s most wonderful kirtan at well within.   after hours of getting blissed out chanting to shiva and durge, an ice cream social followed, and not just any old ice cream, but coconut bliss non-dairy vegan frozen desert!  typically i am not an ‘ice cream’ fan as it places me face to face with possibly my least favorite sensation-cold.  it turns out coconut bliss was sponsoring dave’s tour so we all received coupons for our next pint.  i spent the following day thinking of what i could possibly pair with my new found, incredibly creamy with a hint of coconut, love that would be warming?  ahah….baked apples!
2 apples
1/2 cup dried fruit (i used currants & figs)
3 tsp. agave nectar
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. cardamon
pinch of cloves
1/2 cup water
2 Tbsp. crushed walnuts
2-4 scoops of coconut bliss ‘ice cream’
1-preheat oven to 350.
2-core the apples from the stem end, if possible, without cutting all the way through the bottom.
3-in a separate bowl mix thoroughly the dried fruit, spices, agave nectar and water.
4-placing apples in a small casserole dish, fill the apples with the fruit mix and pour remaining fruit mix around the apples.
5-bake apples for 30 minutes or until tender.
6-let cool for a few minutes, then enjoy the baked apples with a few scoops of coconut bliss vanilla or naked coconut ‘ice cream,’ garnish with crushed walnuts.
